Wizard: Also blow things up, not as much as a Sorcerer but also have a LOT of utility at their disposal.
Sorceror: born with magic.
Wizard: Studied magic for decades.
Gameplay wise.
Sorceror can cast any spell they know and use sorceror points to change how they work.
Wizard can scrible scroll every single Arcane spell in the game but can only cast what they have memorize.
Wizard have more spells but can cast them less often.
Sorcerors have less spells but can cast them more often.
Think of sorceror like the natural who is lazy because he just gets it.
So he rather parties then study.
And the wizard as the nerd who is an expert in ever field he puts effort into but very weak due to spending 90% of his time reading.
Wizard learn magic through study and practise.
Think in Harry Potter terms - Ron Wisley would be a Sorcerer due to his bloodline of magicians, Hermione Granger would be a wizard, no innate talent but lots of study.
Utilities like buffs or heals? Or stuff like poison etc.
Which one is better , has more going in the game? Which has better subs?
Heals are more of a divine casting thing, tho some arcane casters get it(like bard.)
They have a smaller spell list than wizards (a smaller total variety of spells they can learn), however, they can modify spells in special ways trough metamagic. Like targeting 2 creatures instead of 1 by twinning the spell, or quickening the spell which lets them cast it as a bonus action instead of an action. All the spells a sorcerer knows are always ready to cast, they don't have to prepare them.
Wizards are studied casters. They learn magic trough, well study and academics.
They have byfar the largest list of spells of any class, and can actually permanently learn spells from spell scrolls (one time use casting consumables), ontop of getting 2 spells every time they level up. However, a wizard cannot always have all the spells they know ready, they have to pick and choose a selection of them to prepare. They can only cast those prepared spells. Here, they can simply swap their prepared spells out of combat.
Basically sorcerers are more narrow, often offensively focused casters, while wizards are jack-of-all-trades casters that usually have a spell in their book for every situation.
Both are excellent classes, though high level wizards are usually considered a bit more powerful (the most powerful actually), due to having so many different tools at their disposal.
Healing is more of a Cleric's domain but don't make the mistake of thinking Clerics are healbots, they too can dish out an insane amount of spell damage.
Sorcerers are born with innate magical power within them, there is no study here, just practice of how to better control and express their powers within. Thus they are spontaneous casters, and their casting stat is charisma.
