Possible to play coop via family sharing on 2 pcs with one game?

In general, 2 accounts cant play family shared games at the same time (at least online that is). Thats just how family share works in general.

Probably not, but if you and the other person you want to co-op with are able to meet up in person you'll be able to split screen co-op with one pc and one game.

You could probably do this if you bought the game on GOG.
Though I haven't used GOG in like 5+ years so I have no idea really, just seems theoretically possible from what I know of the service.

you can't since it's from your account ID Steam ^^ but if they do an individual and independant server and independant Plateform launcher.....so...it may be okay with it

If Remote Play works with this game then yes, you should be able to play Co-op with one copy of the game but as of yet, there's been no confirmation of whether this feature is available. DOS1 & 2 both are so there is hope.

Technically, yes.

BG3 doesn't use Steam's DRM, so you can launch directly through the exe without Steam being open, meaning Steam won't know to kick one of you off.

You'll just have to direct connect for multiplayer instead of connecting via Steam, and Steam-specific features like achievements are obviously off the table for the player playing directly through the exe without Steam open.
