Though I haven't used GOG in like 5+ years so I have no idea really, just seems theoretically possible from what I know of the service.
BG3 doesn't use Steam's DRM, so you can launch directly through the exe without Steam being open, meaning Steam won't know to kick one of you off.
You'll just have to direct connect for multiplayer instead of connecting via Steam, and Steam-specific features like achievements are obviously off the table for the player playing directly through the exe without Steam open.
You most likely did it wrong.
