No clue if you ever need gems/ingots for anything.
AFAIK Quest items are marked with an orange square around the perimeter of the icon, and can't be sold.
Keep the items you do use.
Not sure whether there are any other "grey" items that have some deeper use to them.
as for equipment, keep anything thats green or better because even green items can be extremely useful, like the green spider boots that make you immune to difficult terrain, thats fantastic.
i am almost done with the game and have found nothing that requires gems.
i dont even think you need to loot food.
i've been long resting after just about every single encounter. and i've been using only camp supply packs. i have bought no supplies at all. and i dont loot food or anything like that. and i still have a couple packs left despite all the long rests i take.
eventually you get to baldurs gate and you can buy camp supplies from a vendor, though i havnt done it yet so idk what it sells, i literally have no need for camp supplies and i dont think i ever will because i keep finding supply packs.
you MIGHT want to loot alcohol because later in the game you can find a gear set that empowers you while you're drunk, perfect for a barbarian or monk as they are clothing and so they dont count as armor. theres even an amulet that makes your drunken state last longer, which is good if you use the full drunkard set. so yeah, keep wine if you want to be a drunken brawler.
sometimes normal items can be combined to make special items, but honestly its pretty tedious to try and mix and match every single item in the game until you figure out the secret combination. Usually you'll find a book nearby that will tell you what to combine something with. Eventually someone will write up a guide for this.
Never works that way in RPGS.
