And I recommend getting to level 5 before you multi-class and know the game better. The skills, not stats, are up to what you are interested in such as athletics, history etc which gives you a few extra points for dice rolls.

Wear heavy armor.
Dex is useful for ranged weapons though. Though strength might be used for thrown.
Archer -- Increase DEX to 16 or 17, decrease STR or whatever. Ranged weapons use DEX for attack.
Dual wield -- These use finesse weapons -- dagger, short sdword, scimitar -- which also use DEX for attack. DEX16 or 17
Wielder of whacking huge great sword -- STR 16 or 17, DEX and CON 14-15.
There are other fighting styles, so be sure to check them out.
WIS, INT and CHR can be dump stats, but a little extra CHR never hurt. If you boost INT a little, you can be an Eldritch Fighter at level 3, which is like a Spellsword.
Depends on what you want, If you want to strictly stay melee than str and con is fine, if you want to dual wield or add archery for ranged than want to put points into dex. Could also do int for some spell slinging
*=Initially both your dual wield weapons have to be light. There's a feat that lets you use any one-handed weapon for dual wielding, so you want to use strength instead of dex.
So for great swords you have to increase Dex as well then? I thought Dex was only for duel wielding and archery.
Strength for melee damage, resistance to being thrown/better ability to shove enemies, better jump distance, more carry weight
Dexterity is not required but is helpful for fighters if you utilize ranged weapons, gives potentially better initiative for combat(Where you start in the turn order), and a bonus to armor score for every 2 levels(14 Dex is useful for Medium Armors, which only let you get +2 Armor Class from dexterity). You could go for a Dexterity fighter that uses archery and/or weapons with the Finesse tag(Rapier, short swords, sabers,etc) for dueling or dual-wielding. Finesse weapons will use the higher of your Strength or Dexterity stats for damage, so you can still focus strength and dual wield
Constitution is your second-most important stat. Governs your health increase at every levels.
Wisdom - Useful stat that has some interactions, like Insight, for dialogue or seeing traps.
Intelligence - One of the fighter subclasses is Eldritch Knight, which uses intelligence for spellcasting. It is also used for saving throws against psychic attacks(IIRC). You can get an item that gives you 17 intelligence when worn, so dump it to 8 at character creation even on an Eldritch Knight.
Charisma - Useful for most dialogue checks, but you can build your background to be proficient in Intimidation/Persuasion/etc without leveling charisma. You could dump charisma but I wouldn't recommend it for a new player. At worst, leave it at 10.
"Dumping" a stat would be setting it at 8 or 9 in character creation, in order to spend more on your primary stats. You only get an increase in modifier from stats for every 2 points(+1 modifier at 12 Strength, +2 at 14, etc). Intelligence is safer to dump than Wisdom or Charisma for most non-caster classes.
