Overkill with 20 primary ability?
Will I gimp my characters if I don't max out their primary ability? (no multi-classing)

Depends on your build, and what you are getting instead. Maxing out your main score is usually your best option, but there are exceptions. For example, if you are a greatweapon Fighter, putting off maxing your STR to get Polearm Master and/or Great Weapon Master is likely worth it, but putting off maxing STR to get a higher INT for those arcana checks isn't worth it.

Think of what rolls you make most often, and raise the ability score that fits with those rolls.

Full casters probably want to race to 20 as well. It effects your spells hitting, how tough your saving throws are as well.

Most likely, yes.

Any offensive caster or weapon user is going to want a 20 in their primary stat.

Because of bounded accuracy, every +1 is extremely important, so that 20 is really nice to have. That being said, sometimes the utility of a feat is more valuable. If the feat is really going to change how you play (GWM, Polearm Master, ect.) then get the feat but i would tend to default to the stats.

I find magical weapons and stuff like Bless/other modifiers are common enough that you can get by without.

Got a potion as a reward that adds 2 to STR permanently, so now my Lae'zel has 22 STR. She carries all my loot and hits like a truck. (or whatever the forgotten realms version of a truck is.)

I was wondering about this as well. In pf2e, the system I am most familiar with these days, stacking those +1 is the intended way and everything is balanced around stacking modifiers. The way feats and multi classing work here, I'll assume that the game does not need you to stack bless, max main stat progression, +x weapon, etc, for a 60% chance at hitting.

Not a fan of bless when there are other good spells.
There is a ring that gives bless on all targets when they get healed. Thats MT go to bless. I think they might stack not sure but yeah

That depends how comfortable you are keeping concentration on that instead of other spells (there are some really good options) and how much you use control magic as it relies on enemies making saves thus bless does nothing for them.

Can be good or bad, just don't start a fight on the way into the tower, at least until you've gotten the potion.

One note, for some Clerics/Druids, CON may be more important than WIS to keep up concentration on buffs
