That already exists... it's in the dialogue.. do you have a hard time differentiating romantically suggestive things you can say from normal conversation? Or turn down people like Astarion?
Not really, I think. To make a serious comment, you have to do a couple specific things or he won't even consider you. If you're a hyper good player who always does the "right" thing, though, you'll probably tick his boxes.
So if you don't want Gale to flirt with you, just be evil. He'll still like you, he just won't give you them bedroom eyes.
That is EXACTLY how I feel about it, I couldn't have worded it better. I'm 100% okay with the options being there for those that want it, but it's a little immersion breaking and uncomfortable to have everyone constantly begging to play slap-ass.

Normally? no. in this game? Absolutely. the romance options are NOT marked, and they aren't always obvious. I am interested in forming a strong bond with my party members, but often asking them about themselves leads directly into romance options or rejection. It's just tedious and annoying.
Give me a break. The scene constantly eludes to sensuality and erotic feelings from the weave and his lust for Mystra. Why are you moving forward with it if you don't want to get in the mood? There are like three points at least where you can cut it off. Moving forward is a choice.
Liz is blunt. She doesn't hide anything. That is her personality. If she wants something she asks in a demanding way but will respect whatever choice you make.
The undead rogue is bisexual dandy because he wants to suck peoples blood. The easiest way to do that is get them into bed obviously and get a nibble in. His interest appears sexual but is motivated for his thirst for your neck.
I think people who don't see the problem have never had someone chase after them like that. Being a rejector is not a "feel-good" experience, and realistically I'd avoid travelling with most of these characters entirely because of it.
