Is there a parry skill or feat in the game?
I recently did the gihtyanki encounter and one of the lvl 6 enemy named Sarge Baretha parried my melee attacks a few times and she wields a greatsword. I'm not aware there's a parry skill/feat in the game. Is there a parry skill/feat in the game?

Battlemaster Maneuver.
I presume it works the same as the 5e TTRPG Version;

Parry
When another creature damages you with a melee attack, you can use your reaction and expend one superiority die to reduce the damage by the number you roll on your superiority die + your Dexterity modifier.

There is a feat called Shield Master (or something like that) which will add bonuses to blocking attacks and possibly taking no damage while wielding a shield.
I used it with Shadowheart during the Early Access and she was a literal tank barely getting hurt during combat.
I haven't tried it yet in the released game.
I'm not sure the feat works without a shield though :(
There could possibly be something else that the gith use to parry.

Try looking at their stats. I think you put the cursor over them and press 'T' to see their information. Perhaps it says something there about defenses and parry.

It's literally just the Parry Maneuver from the Battlemaster Subclass for Warriors.

There are also at least 2 shields that let you shieldbash enemies that hit you.

There is a Githyanki Parry on some of the githyanki patrol's members. I couldn't find it anywhere on the internet though.

AFAIK playable characters can't acquire it. The Battlemaster maneuver that people might be confusing it for is called Riposte:

Riposte doesn't reduce incoming damage, but if you evade a melee attack altogether, then you can use your superiority die to retaliate. Not quite as powerful as parry, since it won't help against ranged attacks and the riposte itself can still miss heavily armoured targets.
