Most of them SHOULD be one-shots, yes, but even at lvl 5, as per the very obnoxious repeated "MISS" I typed out over and over, it isn't working. This isn't MTG, not for me, even 4 HP chaff enemies end up hitting my ♥♥♥♥♥♥♥ monk for 4-5 HP.
There's also the REALLY fun ♥♥♥♥ where, I guess to save time? The devs group enemy actions together, and I'll be allowed to deflect missile if they don't shoot me 3 at a time, which they do a lot.

Either stop sucking at the game and kill the camp full of weak goblins, or find one of the other routes into the Underdark.

Oh gee man what should I practice, what skill should I improve upon, to make sure my 80% chance attacks don't miss? How do I craft a potion of evasion? How do I mod the game so enemies aren't allowed to shoot me while I'm behind cover? Do I need to go full invisibility to continue to hide completely and entirely outside of enemy sight lines?
First off: Ungrateful.
Second of all: Your topic is "is there ANY way to get to seluine temple without having to fight the entire ♥♥♥♥♥♥♥ goblin encampment?" Which I assumed was "never finished elementary school" to mean: Is there a way to get to the Seluné temple without having to fight the entire goblin encampment?" to which my answer is 100% perfect.
Third of all: You only whine about not being able to stealth in your message, you don't say a word about any quests or anything of the sort. If the game is too hard, turn on the "I'm a baby let me explore" difficulty. If you actually want advice, don't act like a ♥♥♥♥ to people who want to help you.
Spoilers.
One, assuming you have been down there and killed the spider already, is in the main room where the queen spider is, jump down that hole. Have feather fall on or you will die. The second is more hidden and took me a while to figure out how to get through, but that is in the tea house at the other illusory door. If you are wearing a mask you can walk through it just like the other one. And use the mushroom circle to teleport. Its a less direct route and you may get caught in a fight with a beholder, but if youve done all the quests upto that point I am assuming you are at least level 5 or so.
Edit: I would recommend the teahouse if you want to get to the selune outpost beneath the temple. But if you just want to get into the underdark and dont really care about the outpost the spider cavern entrance puts you out in the underdark proper.
Maybe this will help you out maybe you've already done it but...
Respec your party... not even saying change there class but, respec them. Especially characters like Shadowheart, who have really REALLY bad stat distributions. What helped me ALOT was just respecing them and fixing there stat allotment. Shadowheart went from a 13 strength to 16 which made her actually able to HIT things. Wear heavy armor, and be a pretty decent front liner. Astarion i switched to a Ranger/Rogue which made him go from kind of pointless to my highest damage dealer. Even Gale who i didn't change much at all benefited from adjusting his stats.
This will Help, but your going to have to accept you are going to miss alot... Especially tanky enemies like shield wielding goblins.
If that bothers you, this just isn't the game for you.
There isn't a secret trick to it.
Approach from the front and lead them onto the bridge. You can shove them off the side or use AOE so they take damage getting to you. Sneak attack to start combat. Have a lot of grease/alchemist fire to throw around. You can pass around hp pots from your inventory to any character that needs healing. From there you can push in to the main part of the camp and then sneak around the top where most of the goblins are passed out drunk, then hop down (use featherfall) to the heavy oaken door.
