How many long rests in Act 1 to not miss events?
Roughly obviously

Edit: I mean, what is the minimum number of rests needed to not miss events taking place during said rests.

No idea about exact or even rough number, but long rest often. I heard partial rest also triggers camp events. And don't worry about running out of supplies
Spoilers coming up for some of the Druid quests.

I beat the game last week and started again. There have been a few times long resting screwed me over. The Grymforge one as everyone says. But also I was doing the Druid Grove quest. I am doing more evil things this time around and got in trouble from stealing. Had to kill Kagha. Did a long rest and came back and it skipped the whole quest. I have journals stating the druids finished the ritual, attacked the tieflings, and now I can't get in there. So I won't be able to talk to Dammon, I can't speak to Zorru. I can't steal the idol. I barely started things in there it felt like and just skipped the whole thing.
I think the total number of long rests is pretty much irrelevant.
There are some quests (mostly local) that when you start them or reach a point a local count of rests play into it before getting different results.
Probably way more stuff you miss due to story choices/progress and bigger region changes.
Best thing is to take a rest early on. If any event triggers, make sure to take the next rest soon, like after maybe 1-2 big fights or significant encounters with NPCs. Keep doing that until you get a night without events, so you are sure you are caught up.

Don't advance to the next stage in the story (when you travel to a new area and are prompted that to make sure you finished any quests you wish to complete) unless you are sure you are completely caught up.

ATTENTION: SPOILERS:::

There is 4 Types of Time Sensitive Quests in the Game which can be Missed if You dont Pay Attention.

(Mind You. None of these really are that Easy to Miss as most will Remind You Outright.)

1.
Quests which once You Find them. Have a Turn Time Limit for You to do them.
This is Usually when You happen upon 2 Factions Fighting Without You.
Or if something is Actively Burning, Exploding, Melting etc whatever.
These Quests Should be Done Immediately Once You Discover them.
Once a Fight is going it will keep going till one Side Wins.
Likewise once some Chest, Crate, House whatever is Burning. It will Burn till the Fire Destroys and Kills things. This Includings Barrels that may Explode etc.

So if You want to not Wait for the Natural Outcome and Intervene.
You need to these Immediately Upon Finding them.

Best make a Quicksave when You Discover them so You can Try again if You Fail the Timelimit.

Or dont.^^ If You like Playing Ironman. None of these being Failed do a Game Over.
Depending on What Kind of Character You Play. Just waiting for People to Kill each other or Die and then Looting them might actually be what You want to do anyways.

2.
Quests which once You Find them have a Day Limit.
1 Day = 1 Long Rest.
These will usually Warn You in some Roundabout Way. For example by a Companion Telling You that You should take care of Something. Or someone Crying for Help in the Background etc.
Dont worry. These are Fairly Few and Usually there is some Dialogue before that which very Clearly Says that "Hey. This Guy Trapped there wont be able to Survive Long if we Dont Save him" etc.

3.
Quests Which will be Progressed or Failed if You make a Major Progress Step in the Main Questline.
For Example Killing the Enemy Main Boss in your current Story Quest.

These are the Easiest to Fail. Because if You did not Find them and went to do the Main Quest instead. These Quests might Simply Dissappear Completely without You ever even knowing about them.
Sometimes You may then Find a Corpse there etc.

However. This really is only the Big Steps in Story.
So just dont Kill the Enemy Main Boss or such Stuff before You Explored the whole Area and You will be Safe from this ;)

4.
And Finally Quests which are Abandoned if You Progress the Area or Main Story itself.
These are Generally very on the Nose. Because they Open a Big Text Warning Asking You if You wish to Proceed making Clear that this might Result in Quests and Locations no Longer being Available to You ;)

yeah, you can also just rest several times in a row without doing anything in between.

I try to long rest as LITTLE as possible, so any idea of how many times I should long rest before end of Act 1 would be great..

Up to this point I have completed EVERYTHING in Act 1 (hag, spider, place with gnome windmill, harpies, etc...)

The only thing I haven't done to my knowledge is underdark and Goblin Outpost and I have only taken 4 long rests...

I have done the same with just 2 and I am worried the game is running away from me....
I do only 4 Long rests in 1 ACT. Zero in 2 ACT.
First= Astarion Jump on you
Second= Mizora coming for Will
Third=Dream keeper
Fourth=Tiefling camp celebration (obligatory)
it depends what you do, the owlbear stuff adds like 2-3 rests i believe.
There is a mod out, that will alert you
Apparently you need to start long resting twice immediately upon landing on the beach, if you don't want to "miss out"

I did 4 rests in Act 1 too, but before leaving I had to do another 7 or 8 for all the events to take place. I "found out" that Astarion was a vampire through some random dialog, cause his scene was delayed for too long. He literally said "I have to tell you something, I am actually a vampire" and the answer was "I know". For that point on, I did a short rest after every fight and 3-4 long rest in a row whenever I run out of short rests.
Broadly, if you want to hit every single optional camp scene, you need to long rest basically after every major story beat, starting from right when you wake up on the beach. Get the mod that alerts you to camp events.
honestly in my second playthough i rested once everyone pre-grove was recruited and from them one or two fights just to be safe. I got to see at least double the interactions that i saw on my first playthrough.
