Astarion feels mandatory to party.
i very much dislike his character but he feels very mandatory due to his proficiencies in disarming traps and picking locks. unless my character is a dexterity class i kinda have to bring him or otherwise i would be at a severe disadvantage as there is no other dexterity companions.

why cant we make custom hirelings?

This also you can pretty much bypass lockpicking with a mage skill too. Most locked chests can be destroyed, most doors have other routes to get behind if they don't already have a key somewhere nearby.

You're not looking / trying hard enough.

uhm, you can hire custom hirelings very soon after u clear the tombs temple near the beach

you can make custom hirelings at withers, but dex adds Armor bonuses so any of your tank characters can benefit from it. also, *most* locks have a rating of 10 so only the less common difficult ones *really* need a good dex. and those are the times where rogues or dex rangers are supposed to shine. If there werent times when a dex character was needed it would be the opposite effect where there isnt any reason to bring them.

I made a bard, never had to put him in the party and he seem happier at camp.

Shadowheart is completely sufficient. Her Trickery Domain is very useful.
The "Knock" spell for Gale or any Wizard/Sorcerer will also make lockpicks pointless.

My player character is able to do more non-combat stuff than Astarion. I take Astarion along as a combat resource when I've exhausted other characters. (Need less long rests that way.)

Also, I think anyone can lockpick, they just won't have the same bonuses. My PC is a Warlock with 14 Dex and no Sleight of Hand Proficiency, and he's able to lockpick.

Not going to lie, when he tried to bite my neck in camp, I killed him with a wooden stake, his body disappeared after i left camp but the aggressive fighter lady's body is still there after shadowheart killed her. I think i can even revive her still but i don't.

I'm thinking i havent seen the last of asterion because of this.

My first action after meeting Astarion is killing him. Since then, Shadowheart opens locks & disarms traps.

You have to unlock an NPC and they give you access. There's a Temple to the East from when you start the game. They show as Ruins and there's looters there already. The NPC is in there, and he will show up in your camp a little bit afterwards.
