With clerics I personally rely a lot on the bless, as it is really nice boost for all characters. Nice if casted before battle starts. Other than that I tend to use other spells that don't use concentration so the bless stays up. Healing potions are also semi plentiful, so I would safe spell slots for buffs/debuffs or heavy damage spells like inflict wound. You can also switth between your spells outside of combat, so equip prayer of healing only when you need it if you need it at all.

Wizards are your general spellcasters that can learn a lot of spells, so play with the versatility they give you. I suggest you use spellslot to cast mage armor after every long rest if you are using robes as the AC boost is really handy.

Don't have that much experience with rogues and Paladins, but rogues really like their stealth attacks, so attempt to re-enter stealth whenever possible. No idea what to suggest with paladin.

If you barely survive the encounter, that's what is supposed to happen. Every fight feels epic and meaningful. Don't forget to take a long rest after nearly every encounter and scoop up that tasty loot. Equip any better gear and trade in your loot for gold. Don't be afraid to spend it on gear at the shop either. Found many good gear pieces at the trader.

Using skill checks to bypass fights is never a bad choice either, you will not miss out on EXP at all. I have even run away from fights. Especially, in the beginning I did not fully clear out the first ruined temple because I was outnumbered so early in the game and I never bothered to go back.

Do encounters become easier as you level up? I was surprised since I'm playing in normal difficulty and thought some fights would at least be easy lol

Yes - you should always check the enemies level. Being "underleveled" does hurt and I wouldn't recommend it. Even one level difference can make a difference (if it is a strong enemy). I once were confident with lvl 4 fighting a "big eye" (lvl 5) and got my ass handed ... ._.

Of course, that's only for balanced / tactical difficulty. Explorer mode should be more forgiving here.

To be honest I kind of want to fight in every encounter to try and get better. I know that there is a better way to do things and so I'm hoping with experience I'll pick it up

very generic setup haha. I use blessings ALOT (crazy not to)
Wizard has quite a few cc spells, sleep is great especially early game, try grease (might not work on spiders lol). I focus on weaker enemies, lower lvl enemies (unless the enemy can easily res them) because then you have fewer enemies damaging you. Use anything that increases your chances to hit. And on extremely hard encounters, boss fights, I like to use speed potion, it's so op. And try to setup before the encounter start, do the bless, mage armor(blur and or mirror image) on your mage, etc. Also make sure your mage has higher ground. Let the rogue go into invis so he can do the advantage backstap (also works on enemies turning their back to him).
Also remember you have ton of spare scrolls and different potions you can use, utilize this as much as possible, especially on tougher encounters. Push enemies of ledges if they are close to the edge. And if someone went down you can toss a pot hitting "x" to him (make sure the character is highlighted) and he / she might get up based on %, or just straight up heal them with your cleric.

Ditch the cleric. If unable or unwilling ditch the Wizard. You've got too much magic not enough hurt. Barbarian, fighter, maybe ranger is you want to keep having a small handicap.

You need brawns.
Control, dbl damage, and crits.

Paladin: choose Oath of the Ancients. Cast Moonbeam and use remaining spell slots for Smite. Consider multiclassing into Sorcerer at some point for even more spell slots.

Rogue: Two choices - Assassin for alpha strike (goes well with Gloomstalker Ranger), or Thief for the extra bonus action. When in doubt, go Assassin (multiclasses really well with Champion Fighter as well).

Cleric: choose Tempest Domain. Cast Create Water on enemies and then lightning and cold spells.

Wizard: Conjuration, Enchantment, Illusion or Transmutation. Conjurers have the most versatility and can put out considerable sustained damage. Enchanters and Illusionists are all about control, and Transmuters are mostly buff/debuffers.

Play the game. Find out for yourself. That's part of the fun.

Pretty much anything is viable in this game because scrolls/barrels/special items are all over the place. It really ruins the immersion when everyone has access to all the tools.
