Jokes aside, pretty much any other class besides Paladin won't have moral restrictions on what you can and can't do. I'd recommend sticking to one class to begin with, however, if you're new to D&D style rules. But, at the end of the day, you do you. If you do want to do a spread of every class, make sure your Ability Score (Strength, Dex, Etc.) Are all equal, otherwise inevitably one of the classes will suffer.

For your first playthrough, when you're still learning the Dungeons & Dragons 5th Edition ruleset, just go for a single class build. Pick one class you like the sound of and stick with it. Multiclassing adds a layer of complexity to character progression and doing it the way you were with just one level dips in each class was just getting you a whole lot of 1st level abilities and almost nothing class-defining. The biggest thing defining your playstyle is going to be your subclass and most classes don't get that until 3rd.
So if you had stuck with Fighter for your 2nd level, you would have gotten the utterly amazing ability called Action Surge - once per short rest you can spend this to gain an extra Action. So at 1st level you could run in, attack, use your bonus action on something else (like a pommel strike or a shove or whatever), pop Action Surge and then stab someone again.

As for why everyone was calling what you were doing an "Abserd Build", they're referencing this video from a youtuber called Puffin Forest where he made a character with one level in every class as a complete joke character for a one-off game.
