Something along the line of “you sure to move forward? You wouldn’t be able to go back once you did”
That's not true. But there are some quest that require you to stay in the act or will be completed. You can return to the first map from act II, but some quests will be no longer accesible, and some places will change.
Nice, but I mean, if I go from Underdark to Act 2 and do all the stuff there, later can I go to the mountains from act 1 per example? And do the Lae'zel quest
This is possible, yes. I'd suggest not going forward to the next area (with Last Light Inn) before you complete whatever you want from Underdark & Mountain Pass. You can still go back, but I've read it causes bugs in the Inn area.

Yeah, you can do all the gith stuff in the creche in the mountain pass before progressing to Act 2 (Shadow-cursed lands).
