If you run away and leave them they will stay mad. Once you figure it out it's easy.
Plus you can just go in turn mode and pick pocket every low level item all at once. Basically clearing out the entire stash in 1 turn.
They did nerf hexing the victim which was making it way too easy. Right now pickpocketing is op, just cast guidance before and go turn mode.
I think the correct way is this :

doesn't change the fact that passing a check then then the person immediately noticing is silly
the "right way" should be passing the check. the point of passing the check is to see if you get caught or not
