It's likely that there will be a workshop, but we don't know when.
I didn't play BG1, although I think BG3 has more than enough content.
I'd rather have few good companions than a lot of bad, lifeless companions as in Pathfinder: WotR.
Lae'zel is Gith, Shadowheart is Half-Elf, Astarion is Highelf, Gale is Human, Wyll I believe is human, Minthara is a Drow, Karlach is Tiefling, Halsin is Woodelf, Jaheira is Half-Elf and Minsc is Human. So there are only 2 races which have each 2 companions out of 10 which mean 8 different races.
And it looks like you only say contra things about BG3 and I'm sure there are more pros than cons. Then why refund? There's a reason 620.000 play this game.
I don't want to say you don't think that there are pros for the game, nevertheless it sounds like you don't have.
Tbh I think only few people believed that there will be BG3, and yet it's here.
So be happy or refund. BG3 wouldn't miss you.
Because you can only have 3 in your party at any given time anyway and each companion has a ton of content put into them.

Honestly I find this a really weird decision as well, but given that there's no way to change a character's appearance after the character creation section I'm willing to believe it has to do with technical issues.
They aren't, like not even remotely the same. Each race has their own set of unique abilities, magic items, dialogue, and even entirely different scenes.
Act 1(which is only like one fifth of the game) alone of BG3 has over 30 hours worth of content, and that's before including all the alternate routes you can take in it which can easily double or triple the amount of total content. BG1 is generally only 44 hours long.
