would difficulty change the ending ?

I highly doubt it, it wouldn't be fair to lock endings that way. People play games in their own way, but that should have no impact on content.

Since it hasn't been mentioned, and based on their past games, I'd say it's a very safe bet to assume difficulty won't affect the story or ending whatsoever.

Yes if you don't roll back saves you very well might have a different ending based on the rolls you get in dialogue, battle outcomes, etc.

These games usually have a "story difficulty" setting for players who dont care about the combat and just want to enjoy the story.
Would not make much sense to then gatekeep story bits or endings behind the difficulty setting.

The game is deterministic in the sense that a series of events could be followed the same way twice if every player encounter happens in the exact same order and the outcome of dice rolls are the same. However, changing the difficulty will affect each of those encounters outcomes by how much harder they will be to win those rolls (along with gameplay differences when going up to tactician).

I would not expect it and would be VERY surprised if there was a single story element tied to the difficulty.

The games difficulty can be switched at any time so it is extremely unlikely there are any difficulty special gated encounters.
