Keep in mind you are going to be 2 levels behind in your caster class to do that, will not have a min-maxed stat built because of the Class requirements and will not get your level 11 power boost since level 12 is maxed afaik.
So yeah, you can technically cast a lot more spells per turn but they'll be weaker.
On the other hand more spells per turn and armor proficiency (if you start as fighter).
Your mileage may vary. In my opinion in tabletop, the answer is no. But respec in BG3 at least allows you to dabble and see if it's good for you. Action Surge is only once per short rest, so this is also the sort of thing that will scale up if you're the sort of player to slam the rest button all the time. We'll see what sort of implications resting too often has in 1.0.
