We don't know the exact skills a Gloomstalker / Assassin is going to have but the tabletop iteration is incredibly powerful. The idea behind this is:
Gloomstalker 3 let's you go first in combat more often. Gives you extra attacks and damage on your first turn, and let's you hide from creatures even if they have darkvision.
Assassin 3 gives you guaranteed Advantage and Critical Hits on all of your attacks against enemies that haven't had a turn yet.
Combining the two let's you "Assassinate" 2-3 targets before the battle has even started with an incredibly powerful Critical Hit sneak attack and follow-up attacks. Preferably with a Long Bow.
Suffering from the same desease. It's horrible isn't it? We can only hope that someday.... someday... they will cure us of our restart desease :(
So on lvl 8 you might get of 4 attacks, 6 when hasted.
But going 5 fighter and then 3 thief will give you 6 attacks, with Action surge and 8 when hasted :D
Alternatively, you could start with fighter 3 for battlemaster and the archery fighting style, then invest in rogue. You'd get less skill proficiencies, but you'd be able to get sneak attacks while also inflicting battlemaster maneuvers like distracting strike or trip attack on enemies
