Second, the reason Dragonborn are usually rolled for Paladins is because their old Racial Ability bonuses (2 STR 1 CHA) fit the class really well. But with Larian making all races have +2 +1 of any ability score with all races, that doesn't matter anymore.
But easier than that: Just play what you want.
Play pure monk or multi class they all are viable options.
Take at least 5 level of monk, after that what ever seems fun! You don´t get much ki about 6 KI with 5 levels if Larian preview video is right, but it could be enough for one fight before short rest.
Rogue / assasing could work with monk, Barbarian, if you want rage (and if they keep dex rage allso in release) Gloom ranger also could fit thematically, But if you don´t care power gaming, pure monk with a lot of KI is super fun to play!
