Enemies spawning out of nowhere
Okay I tried my hand at cheesing the game a little so I went to the goblin camp and climbed a high wall which was near the entrance to the priestess room. There were some sleeping goblins so I shoved them until they fell down. The only way to where I was was up some steps. I had Lae'zel stand near the steps so she could push any enemies which came my way down again. Then I initiated combat. Right after doing that, a bunch of goblins suddenly spawned behind me in the grass and I got wiped because I couldn't hold back the enemies coming up while defending myself from the goblins which were spawning behind me.

Is that normal? I thought that this game was more "WYSIWYG". Kinda defeats the purpose of preparing a defensible position if enemies can just spawn at will right in the middle of your fort.

Your strategy was sound, and enemies do not spawn out of nowhere. While preparing and striking from a high defendable position is a sound strategy, so is scouting your flanks and rear to see if there are other ways to approach said position. If I had to guess, this is likely what happened.
But also be aware, no amount of closing your position off to the enemy's approach will stop an enemy with say, misty step. So always be prepared for hand to hand combat, even if you've designed your position to be nearly unassailable.

There are holes in the ground the goblins can travel through to get onto the top level

This is classic Larian design. DOS II was filled with these kind of traps where mobs appear from nowhere. No way to prepare. Save often see what happens. Then reload. Really disappointing.

There was nothing behind me, I am 100% sure of that. I scouted every inch of the wall I stood on to make sure there was only 1 path I would have to defend. I also saw the goblins come out of the grass with my own two eyes.

Yeah this would make sense. They came out of the grass like they were just getting it on with each other.
