Rock Gnome if you want to go Knowledge Cleric as your first level and get History + any 2 of Arcane, Nature, or Religion expertise. Also gets you medium armor and shield for even more AC, and you can spec into Enchanter who likes to be up close and personal for some reason.
I won't be going dwarf as a wizard but I'd still say they're the "best" choice
The Dwarf with Darkvision and armor seems the best bet to me.

Tbh.. I am more biased towards making a character and then adding the other layers afterwards.
If you think too much about min/max you will take out the soul of your creation, yes I really think that and yes I know a lot of people like it (even on TT I have friends that always do that) but I think you should do what you want, there is less limitations here with the new update to races-
