You could make a Fighter/barbarian hybrid with Multiclassing if you want.
MCing means that you have acces to each classes features.
Some works better in synergy than others.
But you can MC fighter/barbarian with no issues.
You can start as a lvl1 fighter, then get a lvl of barbarian.
Din't check if it changed in BG3, cause in DnD5 rules you gain the proficiencies of class ONLY when you start at 1st level with it.
So per DnD rules if you first start as a barb, THEN get a level of fighter, you don't gain any of the fighter's proficiencies (no medium/heavy armor etc)
But if you do first Figther and THEN Barb, you retain all of the Figther's proficiencies.
Now maybe in BG3 you simply get the gear proficiency of whatever class you've MCed into, but thats something we'll see at launch.
edit: provided you don't wear HEAVY armor.
2 level dips of fighter as a barb for action surge and fighting style is definitely worth it.
I'd say even 3 levels for Battlemaster might be worth it for the extra combat options.
