How is Co-Op Play regarding NPC Interactions?
One of the more frustrating issues myself and my co-op RPG enthusiast partner experience is when Quest and NPC interactions get ruined, and it's usually a rage-quit moment if it continues throughout the game.
Usually, the problem manifests when one of us does a quest turn-in, and the other completely misses out on the conversation if they are not within earshot. Diablo has solved this issue by making side quests completable by individual players, and story quests pull all players in at once.

Are we there yet with Baldur's Gate 3?

Well there is a nifty feature in BG3 and DoS2 (i think its in DoS2?) where you can see an Ear over someones portrait and from anywhere if you are split up for some reason they can click on it and see what you are saying and doing, however generally speaking while you can can split up and go wandering you probably wanna stick generally close to your group in a game like this.

It is possible to miss an interaction yes, but if you are both close you often all get drug in and if you dont you can click on the person who is in one and just watch it from afar if you want.

BG3 automatically pulls nearby players into conversation cutscenes, and faraway players can manually tune into another player's conversation remotely by double-clicking that character's portrait.

So you're never forced to miss out on a conversation, but at the same time, you're never compelled to view a conversation either.

iirc, it works similarly to how it is in DOS2. If your friend is far away from the interaction, they can simply click on your character's portrait and start watching the scene. However, if your friend is nearby, their character will actually appear in the cutscene.

And if they aren't in the cutscene they can act up in the background like the funny monsters they are 😂 just running circles and stuff haha
