But stealth as a concept can trivialize some encounters just by making it easier to attack first and getting a surprise round, let alone if you have a rogue and land a sneak attack to open.

I found a reason for it yesterday and I've only played this game for 17 hours.
It was the most that my party died playing this game.
The solution was to go in stealth, beat the five enemies, then continue to stealth your way through the environment, triggering buttons until you get to safety.
If you didn't do it that way, then you'd die.
If a dual wielding rogue sneaks up on you, say your prayers and eat your vitamins cuz you're probably going down.
And don't even get me started on ranged attacks, you might as well be invisible.
Currently the enemy doesn't have passive perception but instead vision cones so you can avoid stealth rolls altogether by simply staying out of sight. Also, the enemy can't reliably find you if they lose vision of you, which can be done in numerous ways. With stealth currently being a bonus action it breaks the game further, but at least it will be fixed to an action at launch.
Really the issue is that there is no rewarding playstyle around stealth. You either don't use it, or you do and the game can't handle it.
At best you can only use it before combat.. but even that can be too easy if you use manual TB mode.
Not to mention buffed up halflings can stay in stealth non stop all the time even in real time...without even triggering combat... you can literally play that race as the game is action rpgs lol
