All of the companions i guess since romance is not locked to gender. xD
That said, i do wonder if it will impact the quality of the writing, as it can be dificult to write it believably that all of them are basicly omni-sexual
All of them and none of them. If you are playing as a woman then all the women companions are gay and the men are straight. If you are playing as a man then the opposite is true. lol.
