Brand new to D&D systems, got questions!
I have no real idea how the game systems work, though having played Divinity Original Sin 2 and Pillars of Eternity 1 I am somewhat familiar with the overall style of game. Though I was certainly not NEAR making an "optimized" character or party, and I will most likely just play on normal difficulty in BG.

- I REALLY like martial-arts type classes and I just wanna punch and kick a lot, and I know I will be able to make a monk. Is a monk OK to start off with or is it very complex?
- Do enemies respawn in "completed" areas?
- Specifically out of combat checks: can I savescum dicerolls, or, will dicerolls be more in your favor later on? The footage I've seen from early access had all types of checks weighed HEAVILY against you, with most of them requiring at least a 15. Having been traumatized by XCOM levels of bad luck I am really not happy about that level of RNG. If there's an option to skew things more in my favor I'd love that.
- For the sake of completionism, if I ever replay the game, is there a way to see choices I made in previous playthroughs? IE the "routes" shown to us in Detroit: Become Human.

1. Monk is fine to start with and isn't too complex. As long as you're into the concept, you'll be motivated to figure out how it plays, I'd say.

2. Not unless there's a story event of some kind.

3. You can savescum if you want. There's also a mechanic in the game called Inspiration that lets you reroll checks and you build it up by performing actions based on your Background.

4. Don't know, though the codex for that would probably be massive.

Also have to keep in mind in a good RPG failing can sometimes be more interesting than succeeding those checks (for non-combat as you mentioned). Not sure how good a job has been done with this game (no early access for me), but might be worth to try and go with it and see what happens.

You can play any character. Any weaknesses probably can be made up with party composition.

Also a pro tip is turn off karma dice in the options. Karmic dice are semi random with higher chance to fail if you are on a hot streak and a higher chance to succede if you are on a losing streak.

Its default on, some people might be into it but ide rather my rolls be truly random, even if that means i pull a breggor and roll 4 1s in a row and break my magic bow (Props if you get the reference)

Modern gamers just got too scared of anything. Games are supposed to make mistakes. Why savescum? RPGs are about receiving your consequencies and random is fun. Failing some dice checks will only bring you more replayability in the future cuz u will want to see the next option in the 2nd playthrough. Gosh, modern gamers... Traumatized by random and afraid of dices.

-Monk, fighter, barbarian, paladin are fine melee. If you want complete melee without any magic: fighter, barbarian
-Enemies don’t respawn
-Dice rolls are to be met with your own character stats. Beating roll 15 is ok if your choice of stat check goes along with your stats. You also have advantages letting you roll 2dices, guidance, proficiencies, and thing like jack of all trades.
Beating roll 15 isn’t that really hard, but even if you lose roll it is pretty much ok, you also can reroll using inspiration or accept failed roll (sometime it even gives you new options, f.e. with snake and child, if you fail rolling checking Kagha thoughts you will get new option if you passively pass nature check to tell her that snake is ready to attack and kill child. That option won’t appear unless you fail roll). So even losing roll is an option opening new ways sometimes

For the out of combat rolls you can bring a character with the cantrip spell guidance which gives +1d4. Shadowheart have it. You also find a magical item with it. Helps with skill rolls.
