The only classes that got non-phb subclasses are the ones that got shafted in the PHB and only have like 2 options.
So to your question I think assassin will be fine it'll depend on the player and how they go about playing the game.
Assassin pairs well with Champion.

It's going to be really cool to see what all the classes/Origin characters get for indulging in those tiny little brain bugs.
So you're stuck with your level 3 feature. And then you have to decide if you should multiclass and get something thats actually useful, or keep buffing your sneak attack.
Honestly the only time rogue is good is when you can exploit sneak attack. any other time its bad. thats the sad reality. they are good at skill checks though, and would probably make a good main character since our main character ends up being the one that initiates most actions. So tbh our mains should probably all be rogues or bards. or both.
buuut to answer your question, the reason its hard to surprise people in the tabel top game is because DMs are usually jerks who dont want you to trivialize their encounters and so they make sure you fail all your checks or "Oh, uh, there was a guard watching you the entire time, no surprise round. BUT ONE SNUCK UP BEHIND YOU! HAH. YOU'RE SURPRISED!"
But in BG3, you can literally save/reload until you pull off a successful surprise attack. So i'd say the odds are 100% that you'll get to use this feature every combat. To make it easier, have Wyll cast invisibility (or greater invisibility) on your rogue, and just go around assassinating everything like in assassins creed
Either you attack from stealth or you attack some enemy who has some ally in range. One of those has almost always been the case.
Agreed, sneak attack is super easy to trigger.
