shadowheart with shield of faith active dodge/block incoming blows and you PC kills them from distance
Prelude: I am usually lvl 2 when I get to the beach, but this strategy is to not take hits so it also works when lvl 1.
1. don't walk up to them so combat initiate, instead walk close enough to hit the one closest to you with a ranged attack (use stealth), make sure shadowheart has an xbow as it will usually hit better than her cantrips, but check chances, pick the best weapon and then hit closest brain with a ranged attack.
2. round 1 of combat, depending on who moves first and such, kill the brain closest to you and perhaps make a ranged attack on one of the others, and then move out of range of the other surviving brain thingies so they are forced to dash, use push if engaged in melee so you can back away and not end up taking attacks from 2 brains on your characters between your rounds.
3. round 2 of combat... A repeat of round 1.
4. round 3 of combat, kill the last surviving brain and combat is over.
If I got a melee low dex type or something as my main, then I get my main into melee when he is close enough to be the one who attack first and if able I still move him backwards to still force the brains to dash. I use shadowheart's ranged healing spell if my main character is downed in this scenario and contemplate why I've built a low dex melee character that can't take a hit.
(you really shouldn't need to spend spell slots on this, but if you miss too many attacks and are forced into 6th round of combat you won't be able to keep them out of melee even if all your pushes go through, so after my second or third missed ranged attack I usually let Shadowheart fire a guiding bolt on one of them to kill it and get back on track.)
There is.
