download the level cap of 5 from the FILES section, install it with a mod manager & start a new game.
Just make a new character and play them. That's the point of Early Access, to test things out and see if you like them.
https://www.nexusmods.com/baldursgate3/mods/206 You can also check this mod out. It's not what you're asking for but other people might be looking for a stats "respecc" mod. Loaded it into my game yesterday. Gonna see if I can use this to psuedo-put in rolled stats.
For a complete respec I think you could perhaps do it through druid's Reincarnation spell. Yes, I know it's for changing race, not class. But it's at least some story justification for extreme character change.
