There will probably be a way to alter your build further down the line, I believe Larian did say something to that effect but they were still thinking about how to implement it.

Most DMs would probably work with you if you think you messed up your build, just like what happened in a story of a certain Zee Bashew Animated Spellbook.

I hope so. I don't see why some sort of potion of (whatever cool name they think of) couldn't reset your build. It definitely isn't game breaking as far as I can think of.

Regretted giving Moderately Armoured to Wyll and Vampire boy. Figured out too late that with strength 9 they can't carry medium armor. Usually my go to feat since dex/strength increase and medium armor increases survival a lot.

Yeah stuff like that. I gave astarion the DW +1 ac feat cause he was lacking in the AC department. Then realised if I'd gone for the stats the additional +1 from dex would have given him the AC anyway lol. Plus he'd be better on his attack rolls, dex saves, skill checks all kinds of stuff. Ahh well, it happens.

Pretty painful, though. Since it's practically AC 13-15 vs AC 19 with moderately armoured. Thanks to shield and best armors in the early access. Well luckily game is pretty easy. Just finished my Druid playthrough. Probably going to pick druid on full release as well. Looked pretty fun and promising.

Never tried DW route though... I think it's better for warlock or ranger due to hex/mark

Dual Wielder is best for Fighters (or maybe Paladins) since it really goes along side a strength build (as except rapiers, the only weapons it affects require strength). So it could be used with a ranger who goes dual rapier, but I'd still rather have the Dex for a ranger first.

Also Asterion can get to 17AC with Studded Leather +1, Since you can get him a DEX of +4, so it's not that big a difference. And I'd say with Rogues, getting DEX +5 by level 8 is pretty important, since landing a hit with your sneak attack is the main utility of a rogue in combat, not raising DEX does mean you are more likely to miss.

If you are looking at feats, Mobile is better for Rogue than Medium armor as well, you can just run away from the fight out of range.

That is what I've been looking for, studded leather +1! I forgot what it was called just knew astarion's ac was a couple points lower than in previous playthroughs where I included him in the party. Usually everyone in my party has an ac of at least 17 (16 is acceptable for gale I guess with mage armour on)

To add to the importance of sneak attack in 5e, any time you would have advantage on an attack, you get the sneak attack. That is where the bulk of the damage comes from, all the sneak attack di. Some subclasses of rogue really rely on hitting that first sneak attack too, for things like Assassinate.

Well whole point is that with medium armor it's less investment in stats. However it's mostly for Bg3 early access builds. In PnP I never wasted asi or feat slot for medium armor.
However if rogue didn't get that +1 extra bonus action. Then shield and medium armor would be best option in my opinion. However that extra bonus action makes his dual wield build very good, especially if combined with weapon buffs with fire or poison.

That whole +1 extra bonus action is broken, so yea. Understood, EA is definitely different, Mobile is still probably a consideration for a feat since the whole hit and run tactic can be powerful if paired with a good tank.
