Larian actually reduced the enemy AC from normal but increased their hp.
If Larian had follow the normal DnD creature rule you would be missing more lol
Skip to 20:00, the solution is there if you're having too much trouble, but the mechanics changed a bit so it might look different on your playthrough. If you attack from being Hidden with Lae'zel, you will get a surprise on the enemy, meaning you get 1 more bonus turn. Once they are near the purple jars, explode them.
You MUST be exaggerating
There's a concept of "improbability" and the concept of "impossibility". In statistics the latter is usually happening then the former is raised to some above 1 power.
To illustrate: getting an ace out of a deck of card on a first try is .. improbable. Getting that on the first, second, third and fourth tries for all aces is .. impossible (we are talking about one case, not a millions of retries here). Of course, it's not "impossible" in the normal sense, but in a statistical one since it's equivalent to 1/52 x 1/51 x 1/50 x 1/49 which is around 1 in a 6.5 million chance.
What OP says is close to that (or worse) - because for the party to lose the first fight consistently they have to - first, miss almost all of their attacks since even one of that can deliver the imp back to the hell and at the same time getting hit by several imps attacks in a row (because to deplete all heal potions).
Since OP also tried with the different classes (at least 3), we are talking about improbability raised to the 3rd power aka "statistical impossibility". Rough calculations with estimated AC and party attack lead me to believe that such a scenario is far less likely to happen than the showcase with aces.
What's the conclusion? Well, never attribute to malice anything that can be explained with incompetence, misinformation or unforeseen issues. Here the most likely explanation is a technical bug, I can't fathom any other reasonable excuse for it on the premise that OP is telling the whole story.
You have to pay attention to the cursor when attacking and make sure it's actually over, targeting, the imps.
Before you click to attack make sure it shows a % to hit. If you do not see that you are not targeting a monster.
Also, make sure to not stand near the explosive tanks, or better shoot them with the dipped in flame bow to explode them and kill at least the one on the left.
