There are two spells in play here and it is unclear which you are referencing, however, I think you mean MINOR ILLUSION not MIRROR IMAGE.
Mirror image creates three duplicates and adds to your armor class. It is dispelled one image at a time from successful attacks upon the caster.
Minor Image is short lived and is only for grabbing attention of nearby NPCs. I use it to redirect where NPCs are looking so I can sneak around them or pick pocket them. It only lasts until a nearby NPC interacts with the image. It is not a bug. This is how Larian intends this spell to be used.
