Long rests & ceremorphosis [spoilers]
I keep seeing that the tadpole isn't removable but the transformation will never happen. Which is all well and good. However, one thing I'm not able to find mentioned is that there's a long rest event where the ceremorphosis starts - you're feverish and oozing blood and person-slime and whatever and Lae'zel has to put you down, initiating a full combat amongst the camp and being an effective game over.
Are long rest events random, was this added recently, or am I just super missing something? I know you still can't remove the tadpole, but does that now happen in tandem with inevitable, gruesome death? It doesn't seem like events are random, since when that happened I had just reloaded and ended up going through Astarion's one scene a few times. Idk, man.

Those camp events trigger after you use your tadpole powers in dialogue choices. Once you've use the power enough it will trigger a camp scene which will be followed with a dream sequence. In terms of Lea'zel's conflict you can talk your way out of it without fighting. The random nature of the scenes is because other actions also trigger camp scenes and the game might postpone a tadpole scene for a devil or companion scene. If you rest often it shouldn't matter, but if you go long periods of time in between rests the camp scenes start getting out of sync.

OH! Really? Does that mean you don't actually go full squid and it's just early symptoms? Super helpful to know, thank you so much fr

If I'm understanding what you are asking correctly, that is a set scene that happens after 3 uses of the tadpole skill check.
Knock Lae'zel out or talk her down and go to sleep. When you wake everyone should be fine and have brand new class specific tadpole powers.

I believe the ceremorphosis events are progressed based on how much you use the illithid power option in dialogs. For instance I've done playthroughs where I never used my powers and so never had any of those camp cutscenes happen.

But even when I've used the illithid option every chance I could, it never got to a point where Laezel tried to end me. I'd have handed her her head if she tried.

Whether full ceremorphosis can occur is unknowable since EA only goes to the end of act 1. For the EA there is no downside to using the tadpoles power just additional content in the form of dreams and extra powers depending on your class.
