Bows don't have the loading property, you're thinking of crossbows. They have the ammunition property.
I know my assassin Astarion get another action point at 4 (if I'm not wrong). So combined with his bitting and double weapon, he can attack up to 3 times a turn (normal attack, second hand attack, and bitting when it's up).
So I guess it depends on classes also.
My MC is ranger, and as subclasses you can chose a bonus attack on an ennemy that is not full life (it launches automatically), or attacking two other ennemis near your main target (not sure exactly how it worked, but it was : bonus attack on high hp monsters or horde killer). So I guess archers have this possibility even for ennemi archers. ^^
No. Rogues don't get extra attack at all. Rogues can make a bonus action attack with off hand weapon. Also the assassin subclass is not even in the game yet so you must be talking about the thief subclass which in BG3 they do get an extra bonus action attack so yes up to three attacks. 1 main action attack & 2 bonus action attacks.
Fighter, Rangers, Barbarians, & Paladins get extra attack at level 5 which is not available yet.

Certain classes can yes. In 5th edition. Or specifically for Baldurs gate 3, Fighters, rangers, paladins, (some clerics). Fighters can get multiple attacks as an action. They can also get action surge, which allows them to have an additional action for the turn per short/long rest.
If you were to be a lvl 5 fighter with multi attack. You attack twice, then action surge, then get to attack two more times.
BUT...
It only works with melee actions in order to attack 4 times. You can attack twice with a singular round if you do use ranged weapons using action surge. Also if you are dual wielding, you can use your bonus action to attack another time per round with your off-hand weapon but without your proficiency modifier unless you spec into it.
Hand crossbows aren't a thing in BG3 as of yet. Those only require a singular slot to use. If they add it in, you can fire once as an action and fire again as a bonus action as any class.
Incorrect, you can extra attack with ranged weapons as long as they do not have the loading property, or if you get a feat such as Crossbow Expert to ignore it.
