Nut brown with nice highlights. Canonically they have brown skin, not green. No, not black skin or central Asian features, or the various human melanin hues, they're brown. Like wood.
Literally this is their racial colour scheme.

Would the darker end of the Pallid colours be ok to use? Like a Pallid 6?
I have never, ever, anywhere, ever heard of Wood Elves skin color being emerald. Do you have a source for this claim?
Wood Elves skin color in Forgotten Realms is copper or "tan" as written by Ed Greenwood in the Campaign Setting.
Edit: That applies to the other races as well, and also the other color selections (hair, eyes, etc.).

The biggest issue is that Larian haven't really made the non-human faces actually non-human and they're all (barring Gith) basically "humans with funny ears / beards". This is more a WotC / Hasbro issue than Larians, if we're being honest.
Elves have different nose structure / chin structure to humans so you'll get trolled by Kotaku claiming "Wood elves are just indigenous Americans1!!!1" for their next "culture war scoop" because they care about clicks, not honesty.
For the record: go find / look up the Zhent human NPCs - the engine is more than capable (in fact, the best I've seen so far) of making really good "non-Caucasian" faces, with some impressive diversity and genuinely realistic faces, it's just... not available in the character generator at the moment.
So: yeah, that's pretty much as good as the current char gen will get on Wood Elves.
For reference: check out the svirfneblin who gives you the boots of speed quest. She's basically a mini-elf-pin-up-human-clone.
If I got a copper everytime people said that, I would have a silver coin by now
