There are loads of feaseble characters that aren't asexual, but just aren't interested in "soulmates". A warlock would trade his "soulmate" for more power in a heartbeat. A barbarian is accustomed to one-night stands - love 'em and leave 'em. Same goes for thief who never stays in one town for too long, and doesn't keep steady company, because it's always easier to recognise a couple than a single person. And for wizards, asexuality is more or less a requirement, because magic takes up too much of their time.
I think the simplest thing would be to not spend too much time on that section of the character creating and then simply not respond to that person with sexual responses when you encounter them (or anyone) for that matter.
But digging further what if attraction meant more than sexual? What if you were more likely to form a bond with someone? what if they could be attracted to you and you needed to turn down their advances? At the very least, if you character would be more likely to respect or admire someone for the background/race/allignment even if it's only at surface value. This could be one way that could partly play into it. For example, if you are a gith, they are very very likely to respect other gith over the other races due to story/history/distance. I'll try to give a different example, I've always loved Druids and nature, but it's not always my play style to be one. In fact, if i'm putting my own personality into the character I'd be anything but a druid. Im not zen, not in tune with nature, can't keep basic house plants alive, etc but that doesn't mean that i'm not drawn to those who are at times.
Last point for consideration, YOU (and your personality) are not the character by default but if you choose to go that route know that it will always have some restrictions as it's a video game and not the pen and paper experience. After all, I didn't see a background that said, 'sits at home and plays video games and watches netflix' for a background for my character and if im being completely honest, that's what represents me to a tee.

In the game, your tadpole(or something related to) will actually start infecting your dreams the more you become corrupted by it. In order to manipulate you more easily into giving into its dark power, it takes on the form that your character would be most attracted to.
At that point I would suggest you just go with something random or hell, make the person you're attracted to literally just be yourself if you want to. Its not a perfect system that will work for every character, but I think its the easiest and most cost effective way of doing something like since 95% of the players playing this game won't be role-playing as someone who lacks any and all interest in other people romantically.
Now, hunger, vanity and greed - those are the real motivators. Actually, most of the times when someone murders "for the sake of love", it's actually about vanity - you got rejected, your self-image is hurt, so you kill your competitor and/or object of your desire.
So I have to work my original character around some very strict limitations just because? What's the point of calling it "original background" then? Just give me a bunch of pre-gens to choose from. After all, I have absolutely no problem with playing Geralt the Witcher who has a long-running love history with Yennefer.
I think they should rename this part of character creation. Instead of "person you're attracted to" it should read "Person you're most likely listen to". It would be best if we could choose our relations with that person: it could be our relative (mother/father/sister/uncle etc.), our master from our days as an apprentice, a friend, or a love interest. It would be great if the dialogue was different as well.
