Those dragon riders are Githyanki. And those dragons they are riding are on loan from Tiamat. Both of which are FR lore. Salvator's books are not the entirety of the world's story...

Not every event in the Forgotten Realms is going to have a book, it's a large realm and many adventures occur that aren't written about.

As far as storyline goes, it is whatever Wizards of the Coast calls it. If they want to call it canon then it is the canon, no arguments can be made. the opposite is also true. But right now it is AT LEAST apparently related to an OFFICIAL publication by timeline. The novels you read might be canon, but that doesn't mean there cannot be canon materials outside these novels, just like what a previous poster has pointed out.
You opened the post as having issues with the lore not how the game looks. WOTC is ultimately responsible for FG canon. If BG3 went entirely against their lore they wouldn't allow it.
You are blaming the wrong people for your imaginary lore issues. As wotc is overseeing things it's their responsibility to keep Larian's writers in check about the lore. You cannot expect 3rd party writers (as far as dnd lore goes) to know every tidbit about the lore.
