Oh, right. Rib meat, obtainable from some of the bigger animals like alpha Wild Yakmels and Boxing Jacks, plus sugar and soy sauce which can be bought from the saloon and Arvio's shop. At highest friend level, both will give you a 25% discount off the base price, combine that with a flux in the market and you can get those ingredients as low as about 14 Gols a pop.
The dish restores 5% of max SP (so around 25-30 SP once you've got your level high enough and your gear as good as it gets.)
Also highly useful as stamina items are sweet potato bakes (they only give 7 SP per use, but you can make a lot of them real fast if you devote some farming space to sweet potato pepper plants) and dried sandacuda (32 SP, you can fish up sandacuda easily from the first fishing spot near the workshop, just gather some sandberries to use as bait.)
For a bit more of a challenge, there's the rutabaga recipe you get from the Logan's lair quest. The goat likes it but you can also consume it for yourself for a stamina boost.
Veggie Stir-Fry is probably the most powerful stamina item, at least at high level (restores 8% of max SP), but the ingredients are hard to gather. Alfalfa and Soy Sauce can be found in the snake-infested Bend or bought from Owen, Cilantro can be bought from the Mysterious Man, and you can grow or wild-gather the desert mushrooms, but it's still a slog to do. Great if you have everything you need for it though.

I also like Sweet Potato Bake - Stamina +5 - you can plant Wheat and turn it into Flour using the Blender, and both the seeds for Wheat and Sweet Potatoes are cheap and had a large production rate so it becomes very cheap to compensate the low stamina recover.
Steamed Sandfish - Stamina +2 every 2 seconds. Lasts for 30 seconds (total Stamina +60) - Sand Leek grows fast and Salt is also cheap.
For more fast stamina recover, the Dried Sandacuda - stamina +36 - is good to have some in hands in the case you want to finnish the mine floor and the day is near the end
They don't take any water or energy to prepare (no cooking) just lay 'em out on the drying rack.
Edit: BTW, for the first 15 to 20 levels, be sure to pop into the Blue Moon for two meal-of-the-day specials. At that stage of the game they add enough extra stamina to be worthwhile and they're quite inexpensive.
