When it comes between choosing to participate in holiday events or a side quests that arrive on the same day, and you don't have enough time in the day to do both, the best thing to do is prioritising what's most important: The holiday events will always be back, because they always swing around again on the same date every in-game year, but side-quests - if not all of them - don't come back. So I always make it my top priority to focus on those first, over the holiday events.
P.S. Also, if you want to be able to get as much out of your day as you can, make sure to go to the settings, and change the game speed to the lowest setting, 0.6. This will make the days in My Time At Sandrock last a lot longer, because it makes the in-game minutes tick by at a much slower rate, allowing you to get more stuff done in your day.
