Best way to keep a bullet supply high is to take time to scavenge for iron scrap and mine the grey rocks beyond the Shonash bridge to get niter you can turn into gunpowder at the workbench.

Combine those and you'll have plenty of ammo, both pistol (if you don't refine the niter) and rifle.
