Same difference.
GoG games don't have DRM, beyond you needing to download them from GoG in the first place.
The majority of Steam games are the same. Once you've installed them through Steam, you can launch the game directly without the Steam app open, and they play just fine. I do think all the time with my laptop while travelling. Just keep a bunch of things installed, and I can play them without having to run Steam (or have a connection).
