I recommend sniper rifles for the beginning part of the game. Later, i think every weapon type has its spot. Mainly because of the ammo scarcity.
And if you have to choose a pricier MERC because you like him/ her, make sure the others aren't.
You usually can't go wrong with defaults. If it's too easy, you'll know it quickly and if it's too hard you need to learn.
If you can adapt to this difficulty, then cool, soldier on and eventually disable Forgiving Mode too. If, however, you get smeared, then try again and take your time in reading all the tutorial notes for each action, perk, gear and game term. It's a lot to take in and digest in one sitting. So expect to fail and make mistakes a lot at the start.
If after s couple of attempts you are getting consistently beaten, then lower the difficulty to Commando and try again a couple of times. If the game still feels too hard then drop the difficulty again to First Blood. If it still feels too much, then go watch some Y-tube vids on the mechanics and try to spot what you are doing wrong.
The reason for doing it this way is to avoid learning bad habits. The key to surviving the hardest setting, especially if you plan to go Ironman eventually, is to build a repertoire of solid operating practices and standard tactical responses to enemy threats. If you start on easy, you may grow accustomed to the boneheaded moves by the AI makes and it may be harder to unlearn those patterns later.
Well, that's just my opinion on it, and how I tend to approach games like this.
For my feeling the map fight on Ernie Island relatively early against the "Family", then the Legion soldiers, then in the underground, is one of the most difficult in the game, mainly because you have such a ♥♥♥♥♥♥ equipment (pistols and one K98 rifle, in my case). I only succeeded because of Barry's explosives, and that was before the explosives nerf. I played it on "Commando", now I'm on "Mission Impossible", and I would not want to try it in the latter difficulty. Maybe in my second campaign.
There is nothing wrong with getting a few wounds, do not expect flawless battles just because it is the easiest difficulty level.
