How many copies do I need?
If I only want to play with my family, how many copies do I need?
Does it support multiple players on a single device?
What about lan play?

I would say you only need one copy as it does supports multiple players on a single device. You just all choose different players, and turn/hide the screen when it is your turn. Not sure what Ian play is.

If I want to play online, does just the host need a copy?

Uh, no. Everyone has to have their own copy.
I don't think it does LAN.

It does do LAN mode. I play against my siblings pretty often using it. You can use a single copy and play hotseat, but if you have multiple computers/laptops then I'd recommend getting one copy for each.

You can all play on a single computer (hot seat), but it's pretty awkward, as you need to look away from the screen when it's not your turn, so you don't see the other player's cards. Rather than that, I'd actually recommend buying the physical board game (Ticket To Ride Europe, I'd say). Or you each buy the digital game, but on your phones, as it much more convenient than setting up multiple computers.
