As for settings, you need damage at sim and safety car enabled in options to get a proper race imo. You can also try lowering the AI level so that they make more mistakes and drive worse.
It's actually benefited me, as on the 3 occasions I've managed to score points it is because of strategy choices made around the deployment of the safety car.
In comparison to reality, I would say for my current experience it's close to reality, as every time a car parks up in a dumb place they seem to instigated the VSC or SC these days. The way that Jules died in Japan seems to have really affected the mindset of race control.
I just wish the AI could choose better places to park a broken car. As I have had occasions where a car has broken down, parked up in a good spot and no safety car was deployed.
I'm playing on AI 90 and every race they make some mistake. I give to you that it's far from a real person, you'll never see an AI crash on the wall under safety car, or simply see them going past a braking point and make a turn wide, but sometimes they crash into each other and have reliability problems on their cars.
What i think is the worst by far is how a car can crash in the middle of the track and the race director only gives it a yellow flag, while at other times a car breaks and stop on the grass and that is reason for a full on safety car.
A.I. contact with another car involved = yes
Safety cars = yes
A.I. mistakes that lead to an off under own volition = no
A.I. mistakes that lead to slight time loss = yes
A.I mistakes that force them to pit = yes
Pressuring A.I. to make a big mistake = no
Mechanical failures = yes
Player mechanical failures = possible but easily avoidable, should be some random chance apportioned.
I'm 4 full seasons in and this is pretty much it. If you want to see some carnage then DL the 2020 extreme mod over at race dept, brief summary and prepare for safety cars...
This mod increases damage sensitivity in "Simulation" mode to increase amount of AI crashes.
It has the same effect on player and AI, so be careful.
Accidents are not scripted. They occur mostly when AI or player touch each other's wheels and wings during a fight. This means that the more fight, the greater chance of crash will be.
Affect only for modern F1 cars.
Included options:
Extreme: ultra crashes for funny experiments and videos.
Medium: Between 0 to 13 crashes per race(25% and more). Recommended for 5 laps-25% races.
Realistic: Realistic amount of crashes. Sometimes 2 crashes, sometimes zero.
