Best way to get seeds?
Is there really no other way than farming monsters and finding sparse random seeds in the explorer isles?

If so, crops and farming seem severely limited and not viable as a means to feed yourself and your villagers. What is your go-to method to do this?

Also, how do I keep animals happy? Apparently, my chickens became happy when I put seeds in a chest. But then the seed problem rises again.

And finally how do I stop my villagers from harvesting? Simply put the scarecrows on "nothing" mode?

You will unlock later other means to get items in the game by spending gratitude, until then yes you will have to go for the explorer isles and monster drops.

just give them a pet house and a paddock to live in and they will become happy over time, you can also assign pets to a nameplate. Best to rename them first so you can recognize then easier in the register.

And guess you skipped the message the game told you how to stop your villagers from harvesting: remove the scarecrow.

Oh yeah, thanks. Damn, that means it leaves a hole in the field, forcing you to plant the scarecrow outside the field, wait for a villager to till that one spot, remove the scarecrow, replace all the extra tilled soil with normal earth, then use worm food to restore the soil to normal grass?
Later, there's a creature you can recruit that drastically helps you farm, harvest, AND multiplies plant seeds.

Chickens really like a particular plant called wheatgrass, from one of the explorers islands. The game doesn't explain that much.
You also don't need as many seeds as you think. Even if you just started with the 9 crops you can get post-Furrowfield, you could run a village on maybe 15 of each type, super easy to collect with one trip to each Explorer's Shore. You'd still end up with more food than your villagers could possibly prepare and eat by the end of the game.

Also watch out, there is a seed limit. I don't remember what it is, it's pretty generous, but a 9x9 field full of each crop will hit it. (Which, again, would be overkill).

If you want just one block of tilled earth somewhere outside a field, just pick a block up from a regular field with your gloves, or use the trowel to grab a whole mess at once, then smack it down where you need it.
Get to warring isle, clear it to be able to use traps (especially spike traps).
Use them to make monster traps in specific area, which will help you gain more materials you going to need, like seeds.

Dont worry about feeding the villagers by the way. There is no "penalty" if they go hungry. The only thing you gain from doing so is extra hearts but since all the story islands are capped and easily maxed out that doesn't matter. Save your seeds for the Isle of Awakening where you "need" those hearts, and then some more and some more and some more.
That said - there's no advantage to keeping them as seeds either.

Food doesn't go bad, and you don't particularly need to keep seeds around. Just don't harvest them unless you need. The real 'cost' of it is the time waiting for the crops to grow. Just let 'em sit in the field ready to harvest, and you're fine.

Once you get one of those crossbow-robots on your team, you can multiply seeds endlessly later in the game.
