Monster Families. I "think" they all need to be on IOA at same time, too, but not 100% sure here. Only need a representative of each family, not one of each specie.
1. Slime/She-Slime
2. Healslime
3. Muddy Hand/Bloody Hand
4. Great Sabrecub/Sabrecat (Sabrecat is a superstrong so hard to recruit, but super-useful)
5. Walking Corpse and other zombies
6. Chimaera and its variants
7. Golem / Stone Golem / Gold Golem (all of these are superstrongs so hard to recruit)
8. Brownie / Hammerhood
9. Powie Yowie (the game requires you to recruit one of these)
10. Hunter Mech / Kiling Machine (superstrongs so hard to recruit, but great farmers)
11. Living Statue / Stone Guardian (also uniques so hard to recruit)
12. Liquid Metal Slime (superstrong, so ditto)
Unsure if the monsters available in post-game events, Arisplotle or Spolodger for the Slime family or Smashley (the name the game uses internally) from Skelkatraz for the Hammerhood count or not. The other monsters like Jules the Goodybag or the skeletons might also work to satisfy a count of 12, if there's actually 16 types with these included. Its one of the things I'm working up to test on a new playthrough.
Resident Roles. The NPCs you bring back from story islands count toward a lot of these.
1. Villager
2. Farmer
3. Miner
4. Merchant (story forces you to recruit one of these)
5. Bartender
6. Dancer
7. Child
8. Elder (note that Jeremiah is actually a Villager, so you must recruit this one)
9. Nun
10. Soldier
11. Bard
12. Singer (the one you can't get until post-game; usually recruited but there's a secret to getting one by other means)
It appears some of the NPCs with unique roles, like Malroth's Enigma and Anessa's General do not count toward the 12 needed.
A few NPCs aren't the profession you expect them to be (besides Jeremiah, Babs and Magrog are also both Villagers, too, not a Dancer and Miner, respectively) and of course I noted Anessa being General, not Soldier.
