Is there a way to delete items in this game?
Like permanently get rid of them? For example when fishing, sometimes I catch fish that I can't cook and I want to get rid of them entirely.

you could go to a explor isle and drow it away just hold it and drag it out of the item menu

Once you have the Bag most items can be deleted (not just discarded) so long as they're in the bag and not active inventory selection panel. Dr. Medic's solution works for all the ones that it doesn't let you delete though. A few items, like Builder's Workbench, can't be taken to explorer shores so you're stuck hiding them in a chest or burying them.

What I do is I create storage chest and put the extra in the chest so if I ever need anything the first place I look in in my chest. You do gather a lot of crap as you go through the game. It not a problem if you fly through the game. I have enjoyed this game and have taken my time playing it. I have found most of the items and done all the side quest. It was a great fun game. I am still building new things. I built railroad all around the home base island for example.

Click the middle mouse button and select Delete to get rid of items. This only works on items in your inventory.

One thing I have done when I end up with too many of something is sell them to NPCs.
Usually what I do is if I don't need a large number of items is put some storage chests on an Explorer's Shore. Fast dump everything I don't want into the chest(s) and then leave.

If it is just a single item or a few items, put them in your inventory and you can delete them one stack at a time with the context menu button (middle mouse if you are on m+kb).

That or I might dump it in the deep sea then make a 10000+ block structure (using blueprints, never counted the exact amount) and then have a golem destroy all of it, which causes the new items to overwrite any old items before I pick them all up. That will usually get rid of items that don't want to go away.
