I finished the demo and fancied trying it again but in case I didn't finish it the second time round in time for the game's release, I renamed that 'Steam' directory and launched the game again. Sure enough, 'Continue' was greyed out and only 'New Game' was available.
And to be sure, after playing a while, I switched the directories back again and my old play-through was restored.
Thanks dude I’ll take a look

It's not really config files, just save files from digging in the folders a little. Save files seem just binary, can't really suss out config stuff. Log files do mention stuff, but no way to set anything - so no fiddling with mouse sensitivity or whatever.
Perhaps those files were added after a recent update though.

And
Computer\HKEY_CURRENT_USER\Software\Square Enix\DRAGON QUEST BUILDERS 2\Graphic Setting
Those aren't folders, but locations you can go into with Regedit.
As always - be careful with regedit. You can muck up your system if you edit that badly enough.
Also, be aware that values are in hexidecimal by default (decimal in parenthasis).
I'll have to check the values out later tonight.
