First tip, collect every food items on the map. Go across the entire map and collect everything so you can heal while resting.
Characters positionning prior to combat is very important. Use the terrain to your advantage so you don't get surrounded. Use narrow passages that prevent enemies to attack with more than 2-3 mob at a time. Your range attackers and casters should stay behind and should rarely take any damage.
Have clear plans and different roles for every character and companions. (healer and support, tank, range attackers, melee attackers etc.)
Having one character built around Stealth is primordial imho. Select this one as leader when you walk the map sneaking, you can avoid many fights or have advantage prior to fights.
Don't waste arrows. If you think your melee attackers can handle the fight, let the range attackers standing by.
The way my crew is built, the 3 range damage dealers do not receive any damage at all !! They are always backed to the wall at the corner of a room, behind Roland and Driina and my Rogue.
Like a lot of CRPGs, I think the beginning is the hardest. You just don't have much in the way of resources, gear, or abilities. So if you aren't careful with positioning or preparation (not something that's going to be automatic for new players) there's just not much room for error during encounters or options to tip the scales back in your favor.
Once you build a full party and get a few levels under everyone's belt it becomes MUCH easier.
