I would say check with Project CARS 2 FOV
Anyway, I set the wheel to match, from my POV, the same size on screen as I can see on my G29, so I have a better FOV that feels more natural to me and I can perceive distances better.
About cars . . . go trying everything, you will notice many cars will be harder to drive due to the lack of TC and ABS, also Open wheels, formula cars, karts, truck, vintage cars, vintage formulas and open wheels, cars like Fusca and others, they all drive very different from GT3 cars, but if you learned how to drive GT3s at ACC you can drive GT3s the same at AMS2 and wil deliver about the same lap times.
Also, AMS2 have brazilian tracks you wil not find at any other sim, being official unique content to AMS2.
I would say try that around any track
Regarding FOV, calculators never helped me, in ACC it asked me about 20° (vertical) and i endeded up at 45 otherwise it was too zoomed and i could see the dashboard (i play in dashboard view in acc, after the wheel i would describe :p)
Regarding ASM2 i have no clue as i am playing on Ultra wide G9, and i struggle to have a decent FOV where i still can see the dashboard (from cockpit view).
Also i messed up with seat position and i can't reset it now :(
If you have any clue on a decent FOV with a ultra wide 49 monitor i would be gratefull ^^
Try the Ginetta's, they're just plain awesome. The GT1's are a blast as well.
As for tracks, do yourself a favour and work through them all, they're great and not the usual tracks we all know off by heart.

And despite the FOV being narrower, for me to know better the distances to other cars, braking points and apex it was better, because of my screen size and distance frkm screen, I was able to even drive at 0.1s from other cars during turns without crashing.
Now I managed to change my distance from screen and so I changed my FOV:

About you using 20° at ACC according to your 49'' ultra wide monitor, the FOV calculator would only indicate a 20° FOV if you was sitting at 1.39m from acreen.
At some 58cm from screen you would have your 45° FOV.
As I dont know your distance from screen neither your screen aspect ratio, I just made a simulaion at the FOV calculator for aspect ratio 21:9, screen size 49'', changed distance from screen and checked the results for Assetto Corsa.
When in doubt I just check if the in-game steering wheen is the same size, for my view, as my G29 wheel and it work at any sim too, but little to no difference from using the FOV calculator.
I am playing at 100cm fro the screen and it's the G9 odyssey so 32.9 ratio.
For ACC i am fine as i am using 45 fov, otherwise it's too zoomed for me.
But for AMS2 i don't know how to reset seat position, and i struggle to find a good FOV ratio :(

Last question no way we can avoir the ingame wheel turning ? (Basically locking the ingame wheel then it will never move ?)
Is there any possibilités to have like a dashboard in the middle of the screen to follow gears and other info cause right now it's in the far right of the screen.

Only played 2h trying some cars but really confused.
Mp seems a little bit empty (and I do 't know the game yet to go m-p), what are you doing generally when playing solo on the long run?
I like vintage cars, F1 cars but I also test GT3s at AMS2 to see if I can do the same times as I do at ACC (and well, I do, with the same driving on the same tracks).
I really enjoy the feeling of the game, it's sim's but accessible, I just need to choose a car and a championship or a circuit and race on it... But such a hard choice lol
